Betty L. Larsen, 91 of Sioux City, passed away on Wednesday, January 27, 2016 in Blue Earth, Minnesota while visiting family. A Mass of Christian Burial will be 10:30 a.m. Monday, February 1, 2016 at St. Boniface Catholic Church with Father Michael Erpelding as Celebrant. Burial will follow at Calvary Cemetery. Visitation, with family present, will be one hour prior to the Mass at church. Meyer Brothers Colonial Chapel is assisting the family with arrangements. Betty was born on January 8, 1925 in Sioux City, Iowa to Jules and Agnes (Saucier) Mingo and was a life-long resident. She received her education in Sioux City and graduated from Central High School. Betty married John Larsen on August 15, 1946 at St. Jean’s Church in Sioux City, and to this union, seven children were born. Betty took great pride in being a homemaker for her children. She enjoyed gardening, raising both flowers and vegetables, sewing, knitting, crocheting, decorating cakes, and was the original “foody” according to her children. Betty was devoted to her faith, and was a proud member of St. Boniface Catholic Church. After her children were raised, Betty worked at the St. Luke’s Hospital Daycare Center, where she was able to care for her grandchildren. She also enjoyed bowling, and working at the Soup Kitchen.

Betty is survived by her children, Jeff (Barb) Larsen of St. Pete Beach, Florida, Judy Irons (Kenny Geppert) of McCook Lake, South Dakota, Marilyn Marriott (Jim) of Omaha, Nebraska, John (Lil) Larsen of McCook Lake, South Dakota, Karen Rothe (Charlie) of Sioux City, Kathy Larsen (Chuck Healey) of Blue Earth, Minnesota, and Tom Larsen (Shasta Sheets) of Sioux City; grandchildren, Chris and Jill Irons, Andrew, Jim, and Tony Marriott, John and Brad Larsen, Stephanie Rothe, Ben, Amanda, Christian and Laura Guthmiller, Shawn Johnson, Wesley Streets, and Tommy Larsen; 9 great-grandchildren; one great great-grandchild, and a brother, Lee Mingo

. Betty was preceded in death by her parents, devoted husband John in 2001, granddaughter Kimberly Rothe, and brothers Clayton, Ron, and Ray Mingo.
