D "Elaine" Pedersen

Elaine Pedersen, 87, of Sioux City, IA, formerly of South Sioux City, NE passed away on Monday March 31st, 2025 at her residence. A celebration of life will be held in the summer of 2025.

Elaine was born on August 16th, 1937 in rural Walthill, NE, the daughter of Bert and Iva May (Peterson) Sappingfield. She was the only girl with 5 older brothers. She graduated from South Sioux City High School in 1956 and also attended Western Iowa Tech Community College graduating from the secretarial program in 1979.

Elaine married Bob Pedersen on January 25, 1955 at Boals Methodist Church in South Sioux City, NE. To this union there were 3 children born, Robin, Dana & Bob Jr. Elaine worked for Zenith Corporation for several years prior to attending Western Iowa Tech Community College and then as a bookkeeper for Marina Inn and then United Vending until retirement at age 74.

Elaine enjoyed playing cards with her longtime friends, bowling on leagues with her family and friends, fishing and she enjoyed watching and reading Star Wars, Star Trek and Harry Potter. Elaine was an avid Nebraska Cornhusker fan and followed the Chicago Bears. She enjoyed caring for and spoiling her 5 granddaughters.

Survivors include children, Robin Johnson of Longview, WA and Bob Pedersen, Jr. of South Sioux City, NE; 5 granddaughters, Brooke (Jeremiah) Hughes, Amber Ellison, Kady Medina, Jessica Moffatt (Kirk Corio) and Toree (Joseph) D’Antonio; 10 great-grandchildren and 3 great-great-grandchildren. She is preceded in death by her husband Bob and daughter, Dana Cooper.
